This is not a complaint.
My husband has many, many fine qualities, and one of them is that he is a phenomenal baker. PHENOMENAL. His apple pie...mmm. And I don't even like pie, you guys.
When we were asked to bring a dessert a couple of weeks ago, he realized we had some kosher Kahlua from our trip to Mexico.
Here comes the Best. Idea. Ever.
He decided to make a Kahlua cake and set out to the internets to find a great recipe. Oh boy, he did. I can't even describe this cake--very moist, not overly sweet, with some of the nice alcoholic smokiness (I have never been able to find a different word for what alcohol does to me, but it gives me this smokey feeling in my chest and it travels to the rest of me and makes me warm and giddy...I'm not crazy, right? Other people have this?) Since Hubby has taken culinary classes, his baking and cooking projects usually end up looking a lot more Stepford than mine. Meaning, mine look messy and like a three year old put it together, and his looks like an adult, possibly a professional had a hand in the process. Whatever. It tasted amazing and I've already requested another one for my birthday. Make this NOW. It will make everything better.
Ingredients
1 yellow cake mix
1 (6 ounce) package instant chocolate pudding
1/2 cup sugar
1 cup oil
4 large eggs
1/4 cup Kahlua
1/4 cup vodka
3/4 cup water
1 (6 ounce) package instant chocolate pudding
1/2 cup sugar
1 cup oil
4 large eggs
1/4 cup Kahlua
1/4 cup vodka
3/4 cup water
Glaze
1/4 cup Kahlua
1/2 cup powdered sugar, plus additional for serving
Preparation
Spray bundt pan and preheat oven to 345°F.
In large bowl, combine all cake ingredients. Pour batter into prepared pan, smoothing top, then bake until wooden pick or skewer inserted into center comes out clean, about 55 minutes.
While cake is baking, make glaze
In small bowl, whisk together Kahlua and powdered sugar. Pour over warm cake and sprinkle with additional powdered sugar before serving.
